Pasta Salad

2 tablespoons virgin olive oil
1 yellow bell pepper
1 red bell pepper
1 small red onion
2 zucchini
2 yellow squash
2 cloves garlic
2 tablespoons red wine vinegar
2 tablespoons chopped basil

Blend last five ingredients to make the pasta salad dressing. Soak all veggies in olive oil until tender. Mix together while cold and drizzle dressing over pasta.

Beet and Pepper Salad

2 tablespoons virgin olive oil
